Speedy And Spicy Curried Apricot Chicken Salad
INGREDIENTS:
1/2 cup plain low-fat yogurt
1/4 cup high-quality mayonnaise
1 to 2 tablespoons raw honey, to taste
1 tablespoon curry powder
3 cups cooked chicken, diced or shredded
2 stalks celery, diced
2 cups prepared sliced green apples, chopped
1/3 cup dried unsulfured apricots, chopped
1/2 cup toasted sliced almonds
DIRECTIONS:
In a large bowl, whisk together the yogurt, mayo, honey, and curry powder until smooth and well incorporated. Gently stir in the chicken, celery, apples, apricots, and almonds.
YIELD: 4 servings
